Jerk Steak & Shrimp over Yellow Rice

Instructions:

  1. Marinate the steak & shrimp
    • In a bowl, combine steak cubes and shrimp with jerk seasoning, garlic, soy sauce, lime juice, 1 tbsp olive oil, salt, and pepper.
    • Cover and let marinate for at least 30 minutes (longer = more flavor).
  2. Cook the yellow rice
    • In a pot, bring chicken broth and butter to a boil.
    • Add yellow rice, stir, cover, and simmer until cooked (about 20 minutes). Fluff with a fork.
  3. Cook the steak & shrimp
    • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
    • Sear steak cubes until browned and cooked to desired doneness (about 5–7 minutes). Remove and set aside.
    • In the same pan, add shrimp and cook 2–3 minutes per side until pink and slightly charred. Remove and set aside.
  4. Sauté the veggies
    • In the same skillet, add bell peppers and onion. Sauté 3–4 minutes until slightly tender but still crisp.
  5. Assemble
    • Place a bed of yellow rice on each plate.
    • Top with steak, shrimp, and sautéed veggies.
    • Garnish with parsley and lime wedges.
