Ingredients

Chicken & Marinade

  • 700 g (25 oz) bone-in chicken pieces
  • 1 tsp turmeric
  • 1 tsp chili powder or paprika
  • 1 tsp salt
  • 1 tsp garam masala
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • ½ tsp cumin powder
  • 3 tbsp plain yogurt (natural or unsweetened)

Curry

  • 4–5 shallot onions, thinly sliced
  • 2 bay leaves
  • 4–5 green cardamom pods
  • 1 stick cinnamon
  • ½ tsp coriander seeds (optional, crushed or whole)
  • 1 tsp chili powder or paprika
  • 1 tsp garam masala
  • 3 tbsp vegetable oil (neutral-flavored)
  • 2 tbsp ghee
  • 350 ml (1½ cups) warm water (add more if needed)
  • Handful fresh coriander, chopped
  • ½ tsp salt, or to taste
  • 5–6 green chilies, sliced or halved
