- Prepare the candied walnuts: In a small saucepan, combine the honey and water over medium heat. Cook, stirring occasionally, until the mixture thickens slightly. Add the walnuts and stir to coat evenly. Spread the coated walnuts on a baking sheet lined with parchment paper and let them cool completely.
- Make the sweet sauce: In a medium bowl, whisk together the mayonnaise, honey, and yogurt until smooth. Set aside.
- Prepare the shrimp: In a shallow dish, mix the cornstarch, salt, and black pepper. In another shallow dish, whisk the egg with 1 tablespoon of water. Dip each shrimp first in the cornstarch mixture, then in the egg mixture, and back in the cornstarch mixture for an even coating.
- Fry the shrimp: Heat about 1 inch of vegetable oil in a large skillet or wok over medium-high heat until hot. Fry the shrimp in batches for 2–3 minutes per side, until golden brown and crispy. Place cooked shrimp on a wire rack while cooking the remaining batches.
- Assemble the dish: Drizzle the fried shrimp with the prepared sweet sauce, sprinkle with candied walnuts, and serve immediately with steamed rice.
