Homemade Pork Breakfast Sausage Patties

Directions

  1. In a medium-sized bowl, use your hands to combine the ground pork and uncooked, chopped bacon until evenly mixed.
  2. Add sage, thyme, garlic powder, salt, pepper, and nutmeg. Mix thoroughly to ensure the seasonings are evenly distributed.
  3. Stir in the maple syrup and combine well, allowing the sweet flavor to meld with the savory meat.
  4. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  5. While the oil warms, portion the sausage mixture into 1/4 cup portions and form each into a flat patty about 1/2 inch thick.
  6. Cook the patties in the hot skillet, 4 at a time, for 4–5 minutes per side, or until browned and the internal temperature reaches 71°C (160°F). Add more olive oil as needed between batches.
  7. Remove cooked patties from the skillet and place on a paper towel-lined plate to drain excess oil.
  8. Serve immediately for breakfast or brunch, or allow to cool for storing.
