Directions
- In a medium-sized bowl, use your hands to combine the ground pork and uncooked, chopped bacon until evenly mixed.
- Add sage, thyme, garlic powder, salt, pepper, and nutmeg. Mix thoroughly to ensure the seasonings are evenly distributed.
- Stir in the maple syrup and combine well, allowing the sweet flavor to meld with the savory meat.
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- While the oil warms, portion the sausage mixture into 1/4 cup portions and form each into a flat patty about 1/2 inch thick.
- Cook the patties in the hot skillet, 4 at a time, for 4–5 minutes per side, or until browned and the internal temperature reaches 71°C (160°F). Add more olive oil as needed between batches.
- Remove cooked patties from the skillet and place on a paper towel-lined plate to drain excess oil.
- Serve immediately for breakfast or brunch, or allow to cool for storing.
