Directions

  1. In a bowl, mix desiccated coconut, condensed milk, and vanilla until well combined.
  2. Shape the mixture into small bars or rectangles, about 2.5 × 5 cm (1 × 2 inches).
  3. Place bars on a parchment-lined tray and chill in the fridge for at least 30 minutes.
  4. Melt chocolate (with optional coconut oil) in a double boiler or microwave until smooth.
  5. Dip chilled coconut bars into melted chocolate, coating completely.
  6. Place coated bars back on parchment paper.
  7. Chill in the refrigerator until chocolate sets, about 1 hour.
  8. Serve cold or store for later enjoyment.
