Directions
- In a bowl, mix desiccated coconut, condensed milk, and vanilla until well combined.
- Shape the mixture into small bars or rectangles, about 2.5 × 5 cm (1 × 2 inches).
- Place bars on a parchment-lined tray and chill in the fridge for at least 30 minutes.
- Melt chocolate (with optional coconut oil) in a double boiler or microwave until smooth.
- Dip chilled coconut bars into melted chocolate, coating completely.
- Place coated bars back on parchment paper.
- Chill in the refrigerator until chocolate sets, about 1 hour.
- Serve cold or store for later enjoyment.
