Grilled Chicken Skewers with Tzatziki

Directions

  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, smoked paprika, salt, and pepper. Add chicken pieces and toss to coat. Marinate for at least 30 minutes or up to 2 hours in the refrigerator.
  2. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  3. Thread the chicken pieces onto skewers evenly.
  4. Preheat the grill or grill pan over medium-high heat.
  5. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and slightly charred on edges.
  6. Meanwhile, prepare the tzatziki sauce: combine Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper in a bowl. Mix well and chill until ready to serve.
  7. Serve grilled chicken skewers hot with a generous dollop of tzatziki sauce.
