Instructions

  1. Caramelize the Onions: Heat oil in a large pan over medium heat. Add chopped onions and cook until they turn dark brown and sweet.
  2. Add Aromatics: Stir in the minced garlic, bay leaves, cloves, and allspice. Cook for 1–2 minutes until fragrant.
  3. Brown the Chicken: Add the chicken pieces to the pan along with the potatoes. Stir and cook until the chicken is browned on all sides.
  4. Add Stock: Pour in the chicken or vegetable stock. Add small drops of water as needed to maintain some moisture. Season with salt and pepper.
  5. Simmer: Cover the pan and let everything cook until the chicken is tender and the potatoes are fully cooked, about 20–30 minutes depending on the size of the pieces.
  6. Add Vegetables: Stir in the peas or mixed vegetables and cook for an additional 5 minutes until just tender.
  7. Serve: Remove from heat, discard bay leaves and whole spices if desired, and serve hot.
