Instructions
- Caramelize the Onions: Heat oil in a large pan over medium heat. Add chopped onions and cook until they turn dark brown and sweet.
- Add Aromatics: Stir in the minced garlic, bay leaves, cloves, and allspice. Cook for 1–2 minutes until fragrant.
- Brown the Chicken: Add the chicken pieces to the pan along with the potatoes. Stir and cook until the chicken is browned on all sides.
- Add Stock: Pour in the chicken or vegetable stock. Add small drops of water as needed to maintain some moisture. Season with salt and pepper.
- Simmer: Cover the pan and let everything cook until the chicken is tender and the potatoes are fully cooked, about 20–30 minutes depending on the size of the pieces.
- Add Vegetables: Stir in the peas or mixed vegetables and cook for an additional 5 minutes until just tender.
- Serve: Remove from heat, discard bay leaves and whole spices if desired, and serve hot.
