Garlic Parmesan Pork Chops with Garlic-n-Herb Mashed Potatoes & Cheese Broccoli

Directions

Garlic Parmesan Pork Chops:

  1. Preheat oven to 450°F (232°C).
  2. In a pie plate, mix Parmesan cheese, breadcrumbs, paprika, parsley, garlic powder, and pepper.
  3. Heat olive oil in a skillet over medium-high heat, swirling to coat.
  4. Dredge each pork chop in the breadcrumb mixture, pressing lightly to adhere.
  5. Sauté pork chops 2 minutes per side until golden brown. Transfer to an oven-safe dish if skillet isn’t oven-safe.
  6. Bake in preheated oven for 8–10 minutes or until internal temperature reaches 145°F (63°C). Rest 5 minutes before serving.

Garlic-Herb Mashed Potatoes:

  1. Clean and cut potatoes into 1-inch pieces. Cook in a covered pot with beef broth over medium heat until tender, about 30–40 minutes, or use a pressure cooker on high for 12 minutes.
  2. Add cream cheese, butter, roasted garlic, and minced herbs to the cooked potatoes. Mash until smooth and well combined. Season with additional salt and pepper as needed.

Cheese Broccoli:

  1. Wash broccoli and place in a non-stick skillet. Add 1 cup water, cover, and steam over medium heat for 3–5 minutes until tender. Transfer to a bowl and keep warm.
  2. Whisk milk and cornstarch together in a small bowl. Pour into the skillet and whisk over medium heat until thickened.
  3. Reduce heat to low, add cheddar and Parmesan cheese, and whisk until smooth. Season with salt and pepper and pour over the steamed broccoli.
