Garlic Parmesan Chicken Meatloaf

Directions

  1. Preheat the oven:
Set your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Prepare the meatloaf mixture:
In a large bowl, combine ground chicken, breadcrumbs, Parmesan, eggs, garlic, onion, milk, parsley, Italian seasoning, salt, and pepper. Mix gently until just combined—avoid overmixing to keep the meatloaf tender.
  3. Shape the loaf:
Form the mixture into a loaf shape and place it on the prepared baking sheet or in the loaf pan.
  4. Add optional cheese:
Sprinkle shredded mozzarella over the top, pressing lightly into the loaf if desired.
  5. Brush with olive oil:
Brush the top of the meatloaf with olive oil to help create a golden, slightly crispy crust.
  6. Bake:
Place in the preheated oven and bake for 45–50 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Rest and serve:
Let the meatloaf rest for 5–10 minutes before slicing. Serve warm with your favorite sides, such as mashed potatoes, roasted vegetables, or a fresh salad.
