Directions

  1. Preheat your oven to 220°C (450°F). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, combine melted butter, olive oil, and minced garlic. Stir in salt and pepper to taste.
  3. Add the mushrooms to the bowl and toss gently until each mushroom is coated evenly with the garlic butter mixture.
  4. Spread the mushrooms in a single layer on the prepared baking sheet, caps facing up if using large mushrooms. Do not overcrowd the pan.
  5. Roast in the preheated oven for 25 minutes. Avoid opening the oven while roasting to ensure the mushrooms develop a rich golden color.
  6. Once roasted, remove the mushrooms from the oven. If using, drizzle with fresh lemon juice and sprinkle with thyme leaves for added freshness and aroma.
  7. Serve immediately as a side dish, atop polenta, pasta, or even as a main for a light vegetarian meal.
