Garlic Butter Mushroom & Vegetable Stuffed Potatoes

- 4 large russet potatoes
- 1 cup (100g) finely chopped mushrooms
- 3 cloves minced garlic
- 3 tablespoons unsalted butter
- 1/2 cup (120ml) sour cream
- 1/2 cup (50g) shredded cheddar cheese
- 2 tablespoons chopped fresh chives
- Salt and pepper to taste
- Olive oil for greasing
- 1 cup (120g) finely chopped cooked chicken or vegetable bacon substitute, cooked and crumbled
