Directions
- Prepare the potatoes: Peel and dice the potatoes into ½-inch cubes. Rinse in cold water to remove excess starch and pat dry with paper towels. Drying ensures the potatoes crisp nicely when fried.
- Cook the sausage: Heat a large skillet over medium heat. Add the sliced Polish sausage and cook for 4–5 minutes, turning occasionally, until browned and slightly crispy. Remove from the skillet and set aside.
- Sauté the onions: In the same skillet, add the butter and 1 tbsp olive oil. Add the sliced onions and a pinch of salt. Cook over medium heat for 8–10 minutes, stirring occasionally, until soft and lightly caramelized. Transfer to a bowl and set aside.
- Fry the potatoes: Increase the skillet heat to medium-high and add the remaining olive oil. Add the potato cubes in a single layer. Let them cook undisturbed for 4–5 minutes to get a golden crust, then stir occasionally until tender and crispy, about 15–20 minutes. Season with garlic powder, smoked paprika, salt, and pepper.
- Combine ingredients: Reduce the heat to medium and add the cooked onions and sausage back into the skillet with the potatoes. Stir gently to combine and heat everything through for 2–3 minutes. Taste and adjust seasoning if necessary.
- Serve: Garnish with fresh chopped parsley if desired. Serve hot straight from the skillet for a rustic, comforting presentation.
