Fried Potatoes and Onions with Smoked Sausage

Directions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add the potato slices and fry until golden and crispy on the outside but tender inside. Remove from the skillet and set aside.
  3. In the same skillet, add onion rounds and bell pepper strips. Sauté until tender and slightly caramelized.
  4. Add the smoked sausage slices and cook until lightly browned and heated through.
  5. Return the fried potatoes to the skillet. Mix everything together gently to combine.
  6. Sprinkle with paprika, salt, and pepper, stirring to evenly distribute the seasonings.
  7. Continue cooking over medium heat for a few more minutes, allowing the flavors to meld and the ingredients to warm completely.
  8. Remove from heat and garnish with freshly chopped parsley if desired. Serve hot.
