Ingredients

For the Chicken Nuggets:

  • 1 1/2 pounds (680 g) boneless, skinless chicken breasts (about 3 large)
  • 2 large eggs
  • 1/3 cup (80 ml) mayonnaise
  • 1/3 cup (40 g) all-purpose flour, cornstarch, or gluten-free potato starch
  • 4 oz (115 g / 1 1/3 cups) shredded mozzarella cheese
  • 1 1/2 tsp chopped fresh dill (1 g / 0.04 oz)
  • 1/2 tsp salt, or to taste
  • 1/8 tsp black pepper, or to taste
  • 2 tbsp (30 ml) light olive oil or any high-heat cooking oil, for frying

Optional Garlic Aioli:

  • 1/3 cup (80 ml) mayonnaise
  • 1 clove garlic, pressed
  • 1/2 tbsp (7 ml) lemon juice
  • 1/4 tsp salt
  • 1/8 tsp black pepper
