Ingredients

For the Apple Filling

  • 3 medium apples (about 1 lb / 450 g), peeled, cored, and diced
  • ¼ cup granulated sugar (50 g / 1.8 oz)
  • 2 tablespoons brown sugar (25 g / 0.9 oz)
  • 1 teaspoon ground cinnamon (2 g)
  • ¼ teaspoon ground nutmeg (0.5 g)
  • 1 teaspoon lemon juice (5 ml)
  • 1 tablespoon butter (14 g / 0.5 oz)
  • 1 tablespoon cornstarch (8 g)
  • 2 tablespoons water (30 ml)

For the Pie Dough

  • 2 cups all-purpose flour (250 g / 8.8 oz)
  • ½ teaspoon salt (3 g)
  • ½ cup cold unsalted butter (113 g / 4 oz)
  • 5–6 tablespoons ice water (75–90 ml)

For Frying & Finishing

  • 3–4 cups vegetable oil for frying (700–900 ml)
  • ¼ cup powdered sugar (30 g / 1 oz) for dusting (optional)
  • 1 teaspoon cinnamon mixed with 2 tablespoons sugar (optional topping)
