Fried Apple Pies

- 1 teaspoon ground cinnamon (2 g)
- ¼ teaspoon ground nutmeg (0.5 g)
- 1 teaspoon lemon juice (5 ml)
- 1 tablespoon butter (14 g / 0.5 oz)
- 1 tablespoon cornstarch (8 g)
- 2 tablespoons water (30 ml)
For the Pie Dough
- 2 cups all-purpose flour (250 g / 8.8 oz)
- ½ teaspoon salt (3 g)
- ½ cup cold unsalted butter (113 g / 4 oz)
- 5–6 tablespoons ice water (75–90 ml)
For Frying & Finishing
- 3–4 cups vegetable oil for frying (700–900 ml)
- ¼ cup powdered sugar (30 g / 1 oz) for dusting (optional)
- 1 teaspoon cinnamon mixed with 2 tablespoons sugar (optional topping)
