Directions

  1. Preheat your oven to 180°C (350°F). Grease and line a 20 cm (8-inch) round cake pan.
  2. In a bowl, sift together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat the eggs and sugar with an electric mixer for 5–7 minutes until pale, fluffy, and doubled in volume.
  4. Gradually fold in the sifted flour mixture using a spatula, being careful not to deflate the batter.
  5. Mix the warm milk, melted butter, and vanilla extract. Gently fold this into the batter until smooth and combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Avoid opening the oven door too early to prevent collapsing.
  8. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
