Step 1: Prepare the Steaks
Pat the filet mignon steaks dry with paper towels. Season generously with salt and pepper on both sides.
Step 2: Sear the Filet
Heat olive oil in a large skillet over medium-high heat. Once hot, add the steaks and sear for 3–4 minutes per side for medium-rare, or until desired doneness. Add butter, smashed garlic, and thyme during the last 2 minutes, spooning melted butter over the steaks to enhance flavor. Remove steaks from skillet and set aside to rest.
Step 3: Make the Sauce
In the same skillet, lower heat to medium. Pour in heavy cream, scraping up any browned bits from the pan. Stir in Parmesan cheese, Dijon mustard, and Worcestershire sauce. Cook for 3–4 minutes until sauce thickens slightly. Season with salt and pepper to taste.
Step 4: Combine and Serve
Return the filet mignon to the skillet for 1–2 minutes to warm through. Spoon the creamy Parmesan mustard sauce over the steaks and serve immediately.
