Ingredients

For the Base:

  • 2 cups (200g) graham cracker crumbs (or crushed digestive biscuits)
  • 1/2 cup (115g) unsalted butter, melted

For the Cream Filling:

  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 (20 oz / 565g) can crushed pineapple, drained (reserve a few tablespoons of juice)
  • 1 cup (240ml) whipped cream or whipped topping

For the Topping:

  • 1/2 cup (40g) shredded coconut (optional)
  • 1/4 cup (25g) crushed graham crackers or cookies for garnish
  • Maraschino cherries for decoration
