Easy Dumpling Soup

Directions

  1. In a large pot, heat a little oil over medium heat and sauté the onion, carrots, and celery until softened, about 5 minutes.
  2. Add the garlic, broth, thyme, salt, and pepper. Bring to a simmer.
  3. In a bowl, mix flour, baking powder, and salt. Stir in milk, melted butter, and parsley to form a soft dough.
  4. Drop spoonfuls of the dough gently into the simmering broth. Cover and cook for 10–12 minutes, until the dumplings are cooked through and fluffy.
  5. Stir in the peas and cook another 2 minutes. Adjust seasoning to taste.
  6. Serve hot, garnished with extra parsley if desired.
