Directions
- In a large pot, heat a little oil over medium heat and sauté the onion, carrots, and celery until softened, about 5 minutes.
- Add the garlic, broth, thyme, salt, and pepper. Bring to a simmer.
- In a bowl, mix flour, baking powder, and salt. Stir in milk, melted butter, and parsley to form a soft dough.
- Drop spoonfuls of the dough gently into the simmering broth. Cover and cook for 10–12 minutes, until the dumplings are cooked through and fluffy.
- Stir in the peas and cook another 2 minutes. Adjust seasoning to taste.
- Serve hot, garnished with extra parsley if desired.
