Easy Baklava

Ingredients
Baklava:
- 450 g (1 lb / 16 oz) phyllo dough (*see notes)
- 450 g (1 lb) walnuts, chopped (**see notes)
- 1 teaspoon cinnamon
- 225 g (1 cup) vegan butter, softened and spreadable
Sugar Syrup:
- 200 g (1 cup) sugar
- 240 ml (1 cup) water
- 120 ml (1/2 cup) maple syrup or agave nectar (***see notes)
- 1 teaspoon vanilla extract
- 1 teaspoon rosewater extract (optional)
