Instructions

  1. Cook the bacon. Place bacon slices in a large, deep skillet over medium-high heat. Cook, turning occasionally, until evenly browned and crisp, about 10 minutes. Remove the bacon and crumble it into small pieces, leaving the drippings in the skillet.
  2. Prepare the potato mixture. In a large bowl, combine the cold mashed potatoes, eggs, onion powder, salt, and black pepper. Stir in the crumbled bacon and shredded Cheddar cheese until well mixed.
  3. Form the patties. Shape the mixture into 8 evenly sized patties, pressing gently to hold together.
  4. Pan-fry the patties. Heat the bacon drippings over medium heat. Place the patties in the skillet and cook until golden brown and crisp on each side, about 4 minutes per side.
  5. Serve hot. Remove from skillet and serve immediately, either as a side dish, breakfast item, or a main course with your favorite dipping sauce.
