- Cook the bacon. Place bacon slices in a large, deep skillet over medium-high heat. Cook, turning occasionally, until evenly browned and crisp, about 10 minutes. Remove the bacon and crumble it into small pieces, leaving the drippings in the skillet.
- Prepare the potato mixture. In a large bowl, combine the cold mashed potatoes, eggs, onion powder, salt, and black pepper. Stir in the crumbled bacon and shredded Cheddar cheese until well mixed.
- Form the patties. Shape the mixture into 8 evenly sized patties, pressing gently to hold together.
- Pan-fry the patties. Heat the bacon drippings over medium heat. Place the patties in the skillet and cook until golden brown and crisp on each side, about 4 minutes per side.
- Serve hot. Remove from skillet and serve immediately, either as a side dish, breakfast item, or a main course with your favorite dipping sauce.
