Instructions
- Preheat the oven: Preheat your oven to 350º F (175º C) and lightly grease a 9×13-inch baking dish with non-stick spray.
- Prepare the filling: In a large bowl, combine shredded chicken, black beans, corn, 1 cup of Mexican blend cheese, diced tomatoes with green chiles, diced green chiles, cream of chicken soup, sour cream, and taco seasoning. Mix until everything is evenly incorporated.
- Layer the casserole: Spread half of the lightly crushed Doritos evenly in the bottom of the prepared baking dish. Pour the chicken mixture over the chips and spread into an even layer.
- Bake the casserole: Place the dish in the preheated oven and bake for 20 minutes.
- Add the topping: Remove the casserole from the oven. Sprinkle the remaining Doritos and cheese on top. Return to the oven and bake an additional 5–7 minutes, or until the cheese is melted and bubbly.
- Serve: Remove from the oven, let cool slightly, and serve hot. Garnish with chopped cilantro if desired.
