Diced Potatoes

Directions

  1. Preheat Oven: Preheat the oven to 425°F (220°C) if roasting.
  2. Prepare Potatoes: Peel and dice the potatoes into 1/2-inch cubes for even cooking. Rinse them under cold water to remove excess starch and pat dry with a paper towel.
  3. Season: In a large bowl, toss the diced potatoes with olive oil, salt, pepper, paprika, and garlic powder until evenly coated.
  4. Cook – Roasting Method: Spread potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25–30 minutes, stirring halfway through, until golden brown and crispy.
  5. Cook – Skillet Method: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the potatoes in a single layer. Cook for 15–20 minutes, stirring occasionally, until potatoes are tender inside and crisp on the outside.
  6. Serve: Remove from heat and garnish with fresh herbs. Serve as a side dish for breakfast, lunch, or dinner.
