Ingredients

  • 680 g smoked Polish sausage (kielbasa), sliced (1.5 lbs)
  • 4 cups penne pasta (about 340 g)
  • 2 tablespoons butter (30 g)
  • 2 tablespoons all-purpose flour (16 g)
  • 2 ½ cups milk (600 ml)
  • 1 cup sour cream (240 ml)
  • 2 tablespoons Dijon mustard (30 ml)
  • 1 teaspoon garlic powder
  • 16 oz jar sauerkraut, rinsed and well-drained (about 450 g)
  • 3 cups grated Swiss cheese (about 300 g, reserve half for layering)
  • Salt and pepper, to taste
