Crockpot Ham Green Beans and Potatoes

When I say that this was an unexpected success, I can’t emphasize that enough. I honestly didn’t expect a whole lot more than an okay way to use up some leftover ham the first time I tried this in the crockpot.

But, the flavors were superb! This is hearty comfort food that isn’t heavy with cheese or oils. When I say it’s crockpot ham, green beans, and potatoes… that’s what I mean! It’s as simple as can be and my whole family gave it two thumbs up.

Slow Cooker Ham and Potatoes

My 7-quart crockpot was quite full with this recipe, because my ham shank was large and somewhat awkwardly shaped. However, this could’ve fit in a 6-quart crockpot.

If you’re using pieces of ham or smoked sausage instead of a ham shank, this easy recipe for crockpot green beans, ham, and potatoes could be made in a smaller slow cooker.

The cook time will vary depending on the size, shape, and average cooking temperature of your crock pot. Remember, a half-full crockpot tends to cook faster than a full one, so watch the time accordingly.

My family ate this meal with gusto, but don’t worry if the recipe looks like it might be too much food. It keeps well in the fridge, and the leftovers are just as good on day two or three.

Ham Green Beans and Potatoes in Slow Cooker

You’ll need the following ingredients to make this recipe:

  • ham (on or off bone) or smoked sausage
  • yellow or red potatoes
  • large onion
  • 2 lbs of fresh green beans
  • garlic powder
  • onion powder
  • kosher salt and black pepper
  • chicken stock

Place the ham in the slow cooker and then add the potatoes around it. Add the onions and green beans over the top. Then, sprinkle generously with garlic and onion powder, salt, and pepper.

Pour enough chicken broth into the slow cooker to fully cover the ham and potatoes and almost cover the green beans. (The green beans do not need to be fully submerged.)

Cook on LOW for 4-6 hrs, until the green beans are tender-crisp and the potatoes are fork tender. Remove the ham shank from the crockpot and pull the meat from the bone.

Transfer the ham and vegetables to a large serving dish or platter and pour a bit of the juices over the meat. Serve warm.
