Directions

  1. Prepare the fish batter: In a medium bowl, whisk together flour, cornstarch, baking powder, garlic powder, paprika, salt, and pepper. Gradually stir in the cold sparkling water or beer until smooth. Chill in the refrigerator for 10 minutes.
  2. Heat the oil: Pour vegetable oil into a deep skillet or pot to about 2 inches depth. Heat to 350°F (175°C).
  3. Fry the fish: Pat fish fillets dry with paper towels. Dip each fillet into the chilled batter, letting excess drip off. Fry 4–5 minutes per side until golden brown and cooked through. Transfer to paper towels to drain.
  4. Prepare the onion rings batter: Repeat the same battering process using fresh flour, cornstarch, baking powder, paprika, and cold liquid. Season with salt and pepper.
  5. Fry the onion rings: Working in batches, carefully drop onion rings into hot oil. Fry 2–3 minutes per side, until golden and crisp. Drain on paper towels.
  6. Assemble the platter: Arrange fried fish fillets and onion rings on a large serving plate. Garnish with lemon wedges and chopped parsley. Add dipping sauces such as tartar sauce or aioli on the side.
  7. Serve immediately: Enjoy the fish while it’s hot and crispy, and savor the onion rings at their peak crunch.
