Creamy Brioches

Instructions 

  1. Prepare the Dough: In a large bowl, combine the warm milk, brewer’s yeast, and sugar. Stir gently until the yeast begins to activate. Add the eggs and sunflower oil, mixing thoroughly. Gradually incorporate the flour and salt, kneading until a smooth, elastic dough forms.
  2. First Rise: Lightly brush the dough with oil, cover it with aluminum foil, and let it rest in a warm spot for 3 hours, allowing it to rise and double in size.
  3. Shape the Brioche: Sprinkle a little flour on your work surface. Turn out the dough, knead briefly, and divide it into smaller portions. Roll each portion into a ball, ensuring smooth, even shapes.
  4. Second Rise: Place the dough balls on a baking sheet lined with parchment paper. Cover lightly and let them rest for 30 minutes to puff slightly.
  5. Prepare the Cream Filling: In a saucepan, combine the milk, egg, sugar, vanilla sugar, cornstarch, and flour. Cook over medium heat, stirring continuously until the mixture thickens into a smooth cream. Remove from heat and stir in the butter until fully incorporated. Allow the cream to cool slightly.
  6. Fill the Brioche: Gently press the center of each brioche ball with your hands to create a small cavity. Using a piping bag, fill each brioche generously with the prepared vanilla cream.
  7. Bake the Brioches: Brush the tops of the filled brioches with egg yolk to achieve a beautiful golden finish. Bake in a preheated oven at 200°C (392°F) for 30 minutes, or until the brioches are puffed and golden brown.
  8. Finish and Serve: Allow the brioches to cool slightly before dusting them with powdered sugar for a final touch. Serve warm or at room temperature, and enjoy the creamy, soft indulgence.
