Directions

  1. In a large skillet over medium heat, sauté ground beef, onion, and bell pepper until the beef is fully cooked and the vegetables are tender. Drain any excess grease.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in the beef broth, diced tomatoes, taco seasoning, and salsa. Bring the mixture to a simmer.
  4. Reduce heat, cover, and let cook for 2–3 minutes to allow flavors to meld.
  5. Gradually add the softened cream cheese, stirring until fully melted and incorporated.
  6. Stir in heavy cream and 2 cups of shredded cheddar cheese until smooth and creamy. Adjust seasoning with salt and pepper if needed.
  7. Serve hot, garnished with optional toppings like sour cream, green onions, cilantro, or crushed tortilla chips.
