Creamed Spinach Tortellini:
- In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 90 seconds to remove the raw flour taste.
- Gradually add the half & half while whisking continuously. Turn the heat to high until the sauce starts to thicken, then reduce back to medium.
- Stir in the parmesan, cream cheese, smoked gouda, spinach, salt, pepper, garlic powder, nutmeg, and red pepper flakes. Cook, stirring occasionally, until the sauce is thick, smooth, and creamy.
- Add the cooked tortellini to the sauce and gently toss to coat. Keep warm while preparing the shrimp.
Sautéed Shrimp:
- Toss the shrimp with olive oil, Old Bay seasoning, and salt until evenly coated.
- Heat a skillet over medium-high heat. Sauté the shrimp for 2–3 minutes per side, or until they turn pink and are cooked through.
- Serve the sautéed shrimp atop the creamed spinach tortellini immediately.
