Creamed Spinach Tortellini with Sautéed Shrimp

Directions

Creamed Spinach Tortellini:

  1. In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 90 seconds to remove the raw flour taste.
  2. Gradually add the half & half while whisking continuously. Turn the heat to high until the sauce starts to thicken, then reduce back to medium.
  3. Stir in the parmesan, cream cheese, smoked gouda, spinach, salt, pepper, garlic powder, nutmeg, and red pepper flakes. Cook, stirring occasionally, until the sauce is thick, smooth, and creamy.
  4. Add the cooked tortellini to the sauce and gently toss to coat. Keep warm while preparing the shrimp.

Sautéed Shrimp:

  1. Toss the shrimp with olive oil, Old Bay seasoning, and salt until evenly coated.
  2. Heat a skillet over medium-high heat. Sauté the shrimp for 2–3 minutes per side, or until they turn pink and are cooked through.
  3. Serve the sautéed shrimp atop the creamed spinach tortellini immediately.
