Directions
- Preheat the oven: Preheat to 180°C (350°F). Lightly grease a 9x5 inch (23x13 cm) loaf pan or line it with parchment paper.
- Prepare the vegetables: Sauté the chopped onion and minced garlic in a small skillet with 1 tsp of olive oil over medium heat for 3–4 minutes until soft and fragrant. Allow to cool slightly.
- Mix the meatloaf: In a large bowl, combine ground beef, sautéed onions and garlic, breadcrumbs, milk, eggs, Worcestershire sauce, salt, pepper, thyme, and parsley. Mix gently with your hands or a spoon until evenly incorporated, being careful not to overmix, which can make the meatloaf dense.
- Shape the loaf: Transfer the mixture to the prepared loaf pan and shape it into a smooth loaf.
- Prepare the glaze: In a small bowl, mix together ketchup, brown sugar, and Dijon mustard. Spread about half of the glaze evenly over the top of the meatloaf.
- Bake: Place the meatloaf in the preheated oven and bake for 45–55 minutes. About 10 minutes before the end of baking, spread the remaining glaze on top to create a shiny, flavorful crust.
- Check doneness: Ensure the meatloaf reaches an internal temperature of 71°C (160°F). If needed, bake a few minutes longer.
- Rest: Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps retain juices and makes for neater slices.
- Serve: Slice into generous pieces and serve with mashed potatoes, roasted vegetables, or a simple green salad.
