Cinnamon Bread

Directions

  1. In a small bowl, dissolve yeast in warm milk with 1 tsp sugar. Let it sit for 5–10 minutes until frothy.
  2. In a large bowl, combine flour, sugar, and salt. Add melted butter, egg, and yeast mixture. Mix until a dough forms.
  3. Knead the dough on a lightly floured surface for 8–10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm spot for 1–1.5 hours, or until doubled in size.
  4. While the dough rises, prepare the cinnamon filling by mixing sugar, cinnamon, and softened butter until well combined.
  5. Roll the risen dough into a rectangle (about 30×20 cm / 12×8 inches). Spread the cinnamon filling evenly over the dough.
  6. Roll the dough tightly from the long edge to form a log. Pinch the seam to seal. Place in a greased loaf pan. Cover and let rise for another 30–40 minutes.
  7. Preheat oven to 180°C (350°F). Bake the loaf for 30–35 minutes, or until golden brown and cooked through. Cool slightly in the pan before removing.
  8. Optional: Mix powdered sugar, milk, and vanilla to make a glaze. Drizzle over warm bread before slicing.
