Directions

  1. Line a large plate or tray with parchment paper and set aside. This will be your staging area for the peanut butter balls and ensures they don’t stick.
  2. In a medium mixing bowl, combine the peanut butter, coconut flour, and sweetener. Stir with a spatula until all ingredients are fully incorporated. The mixture should be thick but malleable.   3. Using your hands, roll the mixture into small balls, roughly 1 inch (2.5 cm) in diameter, placing each one on the prepared tray. Aim for uniformity so they cook and set evenly. Once rolled, place the tray in the freezer for about 10 minutes to firm up the balls.
  4. While the peanut butter balls are chilling, melt the chocolate chips. You can do this in a microwave-safe bowl in 20–30 second intervals, stirring in between, or over a double boiler on the stovetop. For an extra glossy finish, stir in a teaspoon of coconut oil once melted.
  5. Remove the peanut butter balls from the freezer. Using two forks, carefully dip each ball into the melted chocolate, ensuring it is fully coated. Let excess chocolate drip back into the bowl before placing the ball back onto the parchment-lined tray. Repeat until all balls are coated.
  6. Once coated, refrigerate the chocolate-covered balls for at least 20 minutes to allow the chocolate to set completely. You’ll notice a satisfying snap when you bite into them, paired with the creamy peanut butter center.
