Chocolate Brownie Cherry Cheesecake

Directions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch (23 cm) springform pan, line it with parchment paper, and grease again.
  2. Prepare the brownie layer: Follow the instructions on the brownie mix box to prepare the batter. Spread half of the batter evenly into the prepared pan, smoothing it with a spatula.
  3. Make the cheesecake filling: In a medium bowl, beat together the softened cream cheese, egg, vanilla extract, and sugar until smooth and creamy. Ensure there are no lumps for a silky texture.
  4. Assemble the cheesecake layer: Gently pour the cheesecake filling over the brownie layer in the pan, spreading it evenly with a spatula.
  5. Add the cherry layer: Spoon dollops of the cherry pie filling over the cheesecake layer, reserving a few cherries for topping. Use a knife or skewer to lightly swirl the cherries into the cheesecake layer if desired.
  6. Top with remaining brownie batter: Carefully spoon the remaining brownie batter over the cherry layer. Try to distribute it evenly, and use a spatula to gently smooth it out without mixing it too much into the cheesecake.
  7. Bake the cheesecake: Place the pan in the preheated oven and bake for approximately 60 minutes, or until the center is set and a toothpick inserted comes out mostly clean (a few crumbs are fine).
  8. Cool and chill: Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 3 hours to let the layers set fully.
  9. Decorate and serve: Top with the reserved cherries, and drizzle hot fudge or add whipped cream if desired. Slice with a sharp knife, wiping it clean between cuts for neat slices.
