Directions
- Preheat oven: Preheat your oven to 180°C (350°F). Grease a pudding mold or use a silicone pudding mold for easy removal.
- Blend ingredients: In a blender or food processor, combine the cocoa powder, brown rice flour, eggs, peanut butter, bananas, sweetener, and vanilla extract. Blend until a smooth, homogeneous mixture forms.
- Pour mixture into mold: Transfer the batter into the prepared pudding mold, smoothing the top with a spatula.
- Bake: Place the mold in the oven and bake for 20–30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and serve: Allow the budin to cool slightly before removing from the mold. Serve warm or at room temperature. Optionally, drizzle with a little extra peanut butter or sprinkle cocoa powder on top for presentation.
