Directions

  2. Lay the tortillas flat on a clean surface. Spread an even layer of the chicken mixture over each tortilla, leaving a small border along the edges.
  3. Add any optional toppings such as olives, diced tomatoes, lettuce, or cheese.
  4. Carefully roll each tortilla tightly, tucking in the filling as you go. Secure the ends with toothpicks if necessary.
  5. Slice the rolls into 1–2 inch pinwheels and arrange on a serving platter.
  6. Serve immediately, or cover and refrigerate until ready to serve.
