Directions
- Preheat your oven to 190°C / 375°F and lightly grease a 9×13-inch (23×33 cm) baking dish.
- In a bowl, beat the eggs, then add the sour cream, milk, and dried thyme. Season with salt and pepper. Stir to combine, then whisk in the flour until smooth. This will create the creamy custard that binds the bake together.
- Season the chicken pieces with chicken seasoning, salt, and pepper. Heat 2 tablespoons of butter in a large pan over medium heat. Brown the chicken on both sides until golden but not fully cooked. Remove and set aside.
- In the same pan, sauté the mushrooms and zucchini until the zucchini is slightly softened, about 5 minutes. Remove from the pan and drain well to avoid excess liquid in the bake. Reserve a few pieces of mushrooms and zucchini for topping. Transfer the rest to the prepared baking dish.
- Layer the browned chicken over the mushrooms and zucchini in the dish. Scatter the crushed garlic and sliced spring onions evenly over the chicken. Top with the reserved mushrooms and zucchini for extra texture and flavor.
- Pour the egg mixture evenly over the chicken and vegetables, ensuring it covers all ingredients. This will create a rich, creamy custard as it bakes.
- Sprinkle the shredded mozzarella on top, and add extra dried thyme and freshly ground black pepper if desired. The cheese will melt and turn golden, giving the bake a beautiful crust.
- Bake in the preheated oven for about 45 minutes, or until the custard is set and the cheese is golden and bubbly.
- Remove from the oven and allow to rest for 5 minutes before serving. This helps the custard set slightly for easier slicing.
- Serve warm, straight from the dish, and enjoy the comforting combination of creamy, cheesy, tender chicken and vegetables.
