Chicken and Broccoli Stir Fry

Directions

  1. Spray a 12-inch nonstick skillet with cooking spray and heat over medium-high heat. Alternatively, use a seasoned wok for a more authentic stir-fry experience.
  2. Add the chicken pieces, garlic, and ginger to the skillet. Stir-fry for 2–3 minutes until the chicken is lightly browned on all sides.
  3. Pour in 3/4 cup (180 ml) of the chicken broth, soy sauce, and sugar. Cover and cook over medium heat for about 5 minutes, stirring twice during cooking.
  4. Add the broccoli florets. Cover and cook for another 5 minutes, stirring occasionally, until the chicken is cooked through and the broccoli is crisp-tender.
  5. In a small bowl, mix the remaining 1/4 cup (60 ml) chicken broth with cornstarch until smooth. Stir this mixture into the chicken and broccoli in the skillet.
  6. Cook for 1–2 minutes more, stirring frequently, until the sauce thickens and coats the chicken and broccoli evenly.
  7. Remove from heat and serve immediately over steamed rice or noodles.
