Directions
- Spray a 12-inch nonstick skillet with cooking spray and heat over medium-high heat. Alternatively, use a seasoned wok for a more authentic stir-fry experience.
- Add the chicken pieces, garlic, and ginger to the skillet. Stir-fry for 2–3 minutes until the chicken is lightly browned on all sides.
- Pour in 3/4 cup (180 ml) of the chicken broth, soy sauce, and sugar. Cover and cook over medium heat for about 5 minutes, stirring twice during cooking.
- Add the broccoli florets. Cover and cook for another 5 minutes, stirring occasionally, until the chicken is cooked through and the broccoli is crisp-tender.
- In a small bowl, mix the remaining 1/4 cup (60 ml) chicken broth with cornstarch until smooth. Stir this mixture into the chicken and broccoli in the skillet.
- Cook for 1–2 minutes more, stirring frequently, until the sauce thickens and coats the chicken and broccoli evenly.
- Remove from heat and serve immediately over steamed rice or noodles.
