Cherry Cheesecake

Directions

  1. Prepare the crust. Preheat the oven to 350°F (175°C). In a medium mixing bowl, combine vanilla wafer crumbs, finely chopped pecans, and melted butter until well blended. The mixture should hold together when pressed.
  2. Bake the crust. Press the crumb mixture evenly into a 9×13-inch baking pan. Bake for 15 minutes, or until golden and fragrant. Remove from oven and let cool completely. The warm, nutty aroma will fill your kitchen—perfect for anticipation!
  3. Make the cream cheese layer. In a separate mixing bowl, beat the softened cream cheese with powdered sugar until smooth. Gently fold in 1 ½ cups of whipped topping until light and fluffy. Spread evenly over the cooled crust, smoothing the surface with a spatula.
  4. Prepare the cheesecake pudding layer. In another bowl, combine the cheesecake-flavored pudding mix with 3 cups milk. Whisk until smooth and let it set for a couple of minutes to thicken slightly. Fold in 1 cup whipped topping and spread this mixture evenly over the cream cheese layer.
  5. Add the cherry topping. Spoon the cherry pie filling evenly over the cheesecake pudding layer, allowing some cherries and syrup to cascade slightly over the edges.
  6. Decorate and garnish. Dollop or spread the remaining whipped topping over the cherries. Sprinkle the ½ cup of chopped pecans evenly on top for added texture and a nutty crunch.
  7. Chill and serve. Refrigerate the layered cheesecake for at least 2 hours to let it set fully before slicing. Cut into squares or rectangles and serve chilled.
