Directions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until softened and fragrant.
  3. Add ground beef and cook until browned, breaking it up into small pieces. Drain excess fat if necessary.
  4. Sprinkle taco seasoning over the beef and stir to combine. Pour in beef broth and bring to a simmer for 2–3 minutes.
  5. Lower heat and stir in milk, allowing the mixture to warm through. Gradually add shredded cheddar cheese, stirring until melted and creamy.
  6. Mix in the cooked pasta and salsa, coating everything evenly with the cheesy taco sauce.
  7. Simmer for another 2–3 minutes until the pasta is heated through and the sauce thickens slightly.
  8. Serve hot, garnished with green onions, cilantro, or diced tomatoes if desired.
