Ingredients

  • 450 g (1 lb / 16 oz) pasta (penne, rotini, cavatappi, or similar)

For the Lemon Garlic Butter Sauce

  • 60 ml (¼ cup / 2 fl oz) extra virgin olive oil
  • 113 g (½ cup / 4 oz) unsalted butter
  • 6–8 garlic cloves, minced (about 18 g / 0.6 oz)
  • Zest of 1 lemon
  • 60 ml (¼ cup / 2 fl oz) fresh lemon juice
  • 120 ml (½ cup / 4 fl oz) chicken or vegetable broth
  • 30 g (½ cup loosely packed / 1 oz) fresh parsley, chopped (plus extra for garnish)
  • ½ teaspoon (3 g) salt, or to taste
  • ¼ teaspoon (1 g) freshly ground black pepper
  • ¼–½ teaspoon (1–2 g) crushed red pepper flakes (optional)

For the Cheese Topping

  • 113 g (1 cup / 4 oz) shredded low-moisture mozzarella
  • 100 g (1 cup / 3.5 oz) grated Parmesan cheese
