- 450 g (1 lb / 16 oz) pasta (penne, rotini, cavatappi, or similar)
For the Lemon Garlic Butter Sauce
- 60 ml (¼ cup / 2 fl oz) extra virgin olive oil
- 113 g (½ cup / 4 oz) unsalted butter
- 6–8 garlic cloves, minced (about 18 g / 0.6 oz)
- Zest of 1 lemon
- 60 ml (¼ cup / 2 fl oz) fresh lemon juice
- 120 ml (½ cup / 4 fl oz) chicken or vegetable broth
- 30 g (½ cup loosely packed / 1 oz) fresh parsley, chopped (plus extra for garnish)
- ½ teaspoon (3 g) salt, or to taste
- ¼ teaspoon (1 g) freshly ground black pepper
- ¼–½ teaspoon (1–2 g) crushed red pepper flakes (optional)
For the Cheese Topping
- 113 g (1 cup / 4 oz) shredded low-moisture mozzarella
- 100 g (1 cup / 3.5 oz) grated Parmesan cheese
