Directions
- Preheat the oven to 200°C (400°F) and line a large baking tray with parchment paper. Set aside.
- In a small bowl, whisk together almond flour and baking powder.
- In a microwave-safe bowl, combine the mozzarella and cream cheese. Microwave in 20-second intervals, stirring in between, until melted and smooth.
- Transfer the melted cheese to a food processor fitted with a dough blade. Add eggs and the dry ingredients, and process until a smooth dough forms.
- Roll the dough into a large oval or rectangle on the prepared baking tray.
- Sprinkle shredded mozzarella and parmesan evenly over the dough, leaving about 1.25 cm (½ inch) border around the edges.
- Bake for 10–12 minutes, or until the cheese is melted and golden brown.
- Remove from the oven, sprinkle with chopped cilantro or parsley, and slice lengthwise. Serve warm.
