Directions

  1. Preheat the oven: Set your oven to 220°C (440°F) and line a pizza stone or baking sheet with parchment paper.
  2. Prepare the cauliflower: Add the chopped cauliflower to a food processor and pulse until finely ground, resembling rice. Transfer to a large mixing bowl.
  3. Season and remove moisture: Add minced garlic, Italian seasoning, salt, and pepper to the cauliflower. Mix thoroughly. Place the mixture in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. Return the dry cauliflower to the bowl.
  4. Combine the crust: Stir in mozzarella, Parmesan, and eggs until a sticky dough forms. The mixture should hold together when pressed.
  5. Shape the crust: Spread the cauliflower mixture into a 12-inch (30 cm) circle on the prepared parchment paper. Press evenly for uniform thickness.
  6. Bake the crust: Place in the oven and bake for 12–15 minutes, until lightly golden and set.
  7. Add toppings: Remove the crust from the oven. Spread your desired sauce and toppings evenly over the crust. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  8. Serve: Remove the pizza from the oven, slice, and serve immediately while hot.
