Prepare the Proteins:

- Heat 2 tbsp olive oil in a grill pan or skillet over medium heat.
- Cook chicken breasts for 5–6 minutes per side, or until fully cooked. Remove and let rest, then slice into strips.
- Grill or sear catfish fillets for 3–4 minutes per side, until cooked through and flaky. Remove and set aside.
- Cook shrimp for 2–3 minutes per side until pink and opaque.
Assemble the Salad:
6. In a large salad bowl, combine mixed greens, cherry tomatoes, red onion, cucumber, and chopped parsley.
7. Slice the cooked chicken and flake the catfish into bite-sized pieces. Add the proteins and cooked shrimp to the salad.
Prepare the Dressing:
8. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper until emulsified.
Serve:
9. Drizzle the dressing over the salad and toss gently to combine. Serve with lemon wedges on the side for extra brightness.
