Caramelized Banana Cheesecake with Rum Glaze

Step 1: Make the Crust

Preheat your oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture evenly into the bottom of a 9-inch springform pan. Bake for 8–10 minutes, until lightly golden. Remove from oven and let cool slightly.

Step 2: Make the Cheesecake

In a large bowl, beat the softened cream cheese until smooth and creamy. Gradually add sugar, flour, and vanilla extract, beating until fully combined. Add the eggs one at a time, mixing gently until just incorporated—avoid overmixing to keep the cheesecake silky.

Step 3: Bake the Cheesecake

Pour the cheesecake batter over the prepared crust. Bake for 50–60 minutes, or until the center is mostly set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool slowly, which helps prevent cracking. Remove from oven and allow to cool completely at room temperature.

Step 4: Caramelize the Bananas

In a medium skillet, melt the butter over medium heat. Add banana slices and brown sugar. Cook for 2–3 minutes per side, until golden and caramelized. Sprinkle lightly with cinnamon for added warmth and aroma.

Step 5: Make the Rum Glaze

In a small saucepan, combine rum, brown sugar, and water. Bring to a gentle simmer over medium heat, cooking for 2 minutes until the glaze thickens slightly. Remove from heat and let cool slightly.

Step 6: Assemble

Once the cheesecake is fully cooled, layer the caramelized bananas on top. Drizzle with rum glaze just before serving. Slice and enjoy immediately, or refrigerate briefly for a chilled version.
