Cajun Shrimp Pasta with Sausage

Directions

  1. Cook the Pasta:
    Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. Sauté the Sausage and Vegetables:
    In a large skillet, heat olive oil over medium-high heat. Add the sliced sausage and cook until browned. Remove and set aside. In the same skillet, add garlic, onion, and red bell pepper. Sauté until softened and fragrant, about 3–4 minutes.
  3. Cook the Shrimp:
    Season shrimp with Cajun seasoning, salt, and pepper. Add butter to the skillet, then sauté shrimp for 2–3 minutes per side until pink and opaque. Return the sausage to the pan.
  4. Prepare the Creamy Sauce:
    Reduce heat to medium. Pour in the heavy cream, add Parmesan cheese, smoked paprika, and cayenne if using. Stir continuously until the sauce thickens slightly, about 3–5 minutes.
  5. Combine Pasta and Sauce:
    Add the cooked pasta to the skillet. Toss to coat evenly with the creamy Cajun sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  6. Finish and Serve:
    Taste and adjust seasoning with salt, pepper, or extra Cajun seasoning if desired. Sprinkle with chopped parsley for a fresh touch. Serve hot directly from the skillet or plated individually.
