Step 1: Season the Beef
Pat the beef dry with paper towels and season generously with salt and black pepper. This helps build flavor right from the start.
Step 2: Brown the Bacon
Heat olive oil in a large heavy pot or Dutch oven over medium heat. Add the bacon and cook until crispy and golden. Remove with a slotted spoon and set aside, leaving the rendered fat in the pot.
Step 3: Sear the Beef
Increase heat to medium-high. Brown the beef in batches, turning to sear all sides until deeply golden. Transfer browned beef to a plate.
Step 4: Cook the Aromatics
In the same pot, add the onion and carrots. Cook for 5 minutes until softened and lightly caramelized. Add garlic and cook for 30 seconds until fragrant.
Step 5: Add Flour and Tomato Paste
Sprinkle flour over the vegetables and stir well. Add tomato paste and cook for 1–2 minutes, creating a thick, flavorful base.
Step 6: Deglaze with Wine
Slowly pour in the red wine, scraping the bottom of the pot to release browned bits. Let simmer for 3–4 minutes to reduce slightly.
Step 7: Build the Stew
Return the beef and bacon to the pot. Add beef broth, bay leaves, and thyme. Stir gently to combine.
Step 8: Slow Simmer
Reduce heat to low, cover, and simmer for 2½ to 3 hours, stirring occasionally, until the beef is tender and the sauce is rich and glossy.
Step 9: Add Mushrooms
In the last 30 minutes of cooking, stir in the mushrooms. They will soak up the sauce and add earthy depth.
Step 10: Finish and Serve
Remove bay leaves, adjust seasoning, and garnish with fresh parsley before serving.
