Directions
- Heat a non-stick pan over medium heat and melt 1–1 1/2 tbsp butter.
- Add the banana slices and 1 tbsp sugar. Sauté until golden and caramelized. Remove from pan and set aside to cool slightly.
- In a small bowl, combine the remaining sugar with cinnamon and set aside.
- In another bowl, beat the eggs with milk and set aside.
- Remove crusts from the bread slices and flatten each slice with a rolling pin.
- Spread 1–2 teaspoons of the banana mixture along one edge of each bread slice.
- Brush the remaining side of the bread with the prepared egg mixture.
- Gently but tightly roll up the bread around the banana mixture and seal to form a roll. Repeat with remaining bread slices.
- Melt about 1 tbsp butter in the pan over medium heat.
- Dip each roll in the egg mixture and place seam side down in the pan, cooking 3–4 rolls at a time.
- Cook until browned, turning a quarter turn to cook all sides evenly.
- Wipe the pan lightly with a paper towel and continue cooking the remaining rolls.
- Roll the cooked French toast rolls in the cinnamon-sugar mixture or dust with powdered sugar before serving.
