Banana French Toast Roll-Ups

Directions

  1. Heat a non-stick pan over medium heat and melt 1–1 1/2 tbsp butter.
  2. Add the banana slices and 1 tbsp sugar. Sauté until golden and caramelized. Remove from pan and set aside to cool slightly.
  3. In a small bowl, combine the remaining sugar with cinnamon and set aside.
  4. In another bowl, beat the eggs with milk and set aside.
  5. Remove crusts from the bread slices and flatten each slice with a rolling pin.
  6. Spread 1–2 teaspoons of the banana mixture along one edge of each bread slice.
  7. Brush the remaining side of the bread with the prepared egg mixture.
  8. Gently but tightly roll up the bread around the banana mixture and seal to form a roll. Repeat with remaining bread slices.
  9. Melt about 1 tbsp butter in the pan over medium heat.
  10. Dip each roll in the egg mixture and place seam side down in the pan, cooking 3–4 rolls at a time.
  11. Cook until browned, turning a quarter turn to cook all sides evenly.
  12. Wipe the pan lightly with a paper towel and continue cooking the remaining rolls.
  13. Roll the cooked French toast rolls in the cinnamon-sugar mixture or dust with powdered sugar before serving.
