Banana Bread with Yogurt

Instructions

  1. Preheat the oven to 180°C (350°F). Line a 9 x 4-inch (23 x 10 cm) loaf pan with parchment paper and set aside.
  2. In a small bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, mash the bananas with a fork until smooth. Add the softened butter, maple syrup, yogurt, eggs, and vanilla extract, and mix until combined.
  4. Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix. If using walnuts, fold them in at this stage.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 50–60 minutes, or until a skewer inserted into the center comes out clean. Check at the 50-minute mark to avoid overbaking.
  7. Remove from the oven and allow the banana bread to cool completely in the pan. Once cooled, slice and serve.
