Instructions
- Preheat the oven to 180°C (350°F). Line a 9 x 4-inch (23 x 10 cm) loaf pan with parchment paper and set aside.
- In a small bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, mash the bananas with a fork until smooth. Add the softened butter, maple syrup, yogurt, eggs, and vanilla extract, and mix until combined.
- Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix. If using walnuts, fold them in at this stage.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50–60 minutes, or until a skewer inserted into the center comes out clean. Check at the 50-minute mark to avoid overbaking.
- Remove from the oven and allow the banana bread to cool completely in the pan. Once cooled, slice and serve.
