BAKED SWEET POTATOES WITH SPINACH, MUSHROOM & FETA ENHANCED WITH ROASTED GARLIC TAHINI SAUCE

INSTRUCTIONS:

STEP 1: PREPARE THE SWEET POTATOES

Bake Sweet Potatoes: Preheat your oven to 400°F (200°C). Pierce each sweet potato several times with a fork. Place them on a baking sheet and bake for about 45-60 minutes, or until tender.

STEP 2: MAKE THE ROASTED GARLIC TAHINI SAUCE

Roast Garlic: While the sweet potatoes are baking, cut the top off the head of garlic to expose the cloves. Drizzle with olive oil, wrap in foil, and roast in the oven for about 30-35 minutes until soft and caramelized.
Prepare Sauce: In a bowl, combine tahini, roasted garlic (squeezed from the skins), lemon juice, and salt. Mix well, adding water gradually until you reach your desired consistency.

STEP 3: SAUTE THE FILLING

Sauté Vegetables: In a skillet, heat olive oil over medium heat. Add sliced mushrooms and cook until they are golden brown. Add chopped spinach and cook until wilted. Season with salt and pepper.

STEP 4: ASSEMBLE AND SERVE

Stuff Sweet Potatoes: Once the sweet potatoes are done, carefully slice them open and fluff the insides with a fork. Spoon the sautéed spinach and mushrooms into each sweet potato and top with crumbled feta cheese.
Drizzle Sauce: Finish with a generous drizzle of the roasted garlic tahini sauce over the stuffed sweet potatoes.
