Directions
Step 1: Preheat Oven
Preheat your oven to 400°F (200°C) and line a baking sheet with a silicone mat or parchment paper.
Step 2: Mix Dry Ingredients
In a large bowl, whisk together the flours, brown sugar, baking powder, cinnamon, nutmeg, allspice, and salt.
Step 3: Cut in Butter
Using a pastry cutter or your fingers, cut the cold butter into the dry mixture until it resembles coarse crumbs.
Step 4: Add Wet Ingredients
In a small bowl, whisk together the milk, egg, and vanilla extract. Add this to the flour-butter mixture and stir until just combined.
Step 5: Fold in Apples
Gently fold in the chopped apple pieces, making sure they are evenly distributed throughout the batter.
Step 6: Portion Fritters
Drop the batter by 1/4-cupfuls onto the prepared baking sheet, spacing them slightly apart.
Step 7: Bake
Bake for 11–13 minutes, until the bottoms are golden and the centers are set. Remove from oven and transfer to a wire rack.
Step 8: Prepare Glaze
While the fritters are cooling slightly, whisk together the confectioner’s sugar, milk, and vanilla extract to make a smooth glaze.
Step 9: Glaze and Broil
Brush a thin layer of glaze over the fritters, then place them under the broiler for 2–4 minutes, until the tops turn golden and slightly caramelized.
Step 10: Finish and Serve
Brush the remaining glaze over the warm fritters. Allow the glaze to harden slightly before serving. Enjoy warm!
